Zucchini Egg Cups

You haven't seen a muffin yet. Well, this is my recipe that is very interesting to me. Wish everyone.


  • 8 eggs
  • 1/2 c. heavy cream
  • Kosher salt
  • Cooking spray, for pan
  • 2 zucchini, peeled into strips
  • 1/4 lb. ham, chopped
  • 1/2 c. cherry tomatoes, quartered
  • Freshly ground black pepper
  • 1/2 tsp. dried oregano
  • 1 c. Pinch red pepper flakes
  • 1 c. shredded cheddar

Zucchini Egg Cups


  1. Preheat oven to 400° and grease a muffin tin with cookery spray. Parentage the surface and minimal of the gem tin with zucchini strips, to organize a crust. Sprinkle ham and red tomatoes inner each encrustation. 
  2. In a medium concavity wipe together eggs, fat, cream, marjoram, and red pepper flakes then flavor with flavourer and flavouring. Stream egg smorgasbord over ham and tomatoes then top with cheeseflower.  
  3. Bake until foodstuff are set, 30 proceedings.
